PALAK PANEER

Palak Paneer is a dish made from spinach and cottage cheese. With Indian spices, Palak Paneer is one of the enjoyable savory way to consume spinach. And adding pinch of honey alleviates the bitterness of spinach and enhance its taste with soft buttery cottage cheese. Palak Paneer is best enjoyed with plain naan or garlic naan. INGREDIENTS:

2 cup fresh spinach

1 cup cottage cheese (paneer cubes)

2 tbsp unsalted butter or clarified butter (ghee)

1 cup sliced onion

1/4 cup chopped tomato

1 tbsp chopped garlic

1 tsp crushed green chili

1/2 tsp crushed ginger

1/4 tsp turmeric

1/2 tsp red chili powder

1/2 tsp coriander powder

1/2 tsp garam masala

1/2 tsp cumin seeds (jeera)

1 tbsp honey

1/4 cup fresh cream

1 tsp salt or as per taste

1/2 cup fresh coriander

DIRECTIONS:

Boil 4 cups of water and add fresh spinach.

Cook for 2-3 minutes and transfer to ice cold water.

Add 1 tbsp butter to heated pan.

Add sliced onion and cook for 2 minutes.

Add chopped garlic and tomato and cook for 3 minutes.

Add turmeric, red chili powder, coriander powder.

Add crushed green chili and ginger and cook for 1 minute.

Add salt and mix well.

Turn off the heat.

Add prepared mixture into blender with 1 cup water.

Add boiled spinach and fresh coriander.

Blend everything together into smooth paste.

Add 1 tbsp butter into heated pan.

Add cumin seeds and saute for 1 minute.

Add cottage cheese cubes and cook for 1-2 minutes.

Add blended mixture and mix well.

Cook for 2 minutes.

Add garam masala and cook for 2 minutes.

Turn off heat.

Add honey and fresh cream.

Palak Paneer ready for serving.

Serve with plain naan or garlic naan.
